  • 1 Duncan Hines yellow cake mix (mix according to directions)
  • 2 lb. whole milk Ricotta
  • 3/4 c. sugar
  • 4 eggs
  • 1/2 tsp. vanilla, anise, almond or rum extract

Directions

    Pour cake mix into 9 x 12 x 2 floured and greased pan.

    In same bowl, mix by hand Ricotta, sugar, eggs and vanilla.

    Spread evenly on top of cake mix.

    Bake 1 hour at 350°.

    Cool (sprinkle with confectioners sugar, when serving).

    (Better second day than first.)

    Freezes well!
