- 2 -3 lbs boneless skinless chicken
- 2 (8 ounce) cans pinto beans
- 1 (8 ounce) can black beans
- 1 (8 ounce) package taco seasoning
- 4 cups cooked yellow rice
- 2 cups shredded cheese
- 8 ounces sour cream
- 3 cups shredded lettuce
- 1 diced tomato
- 16 ounces salsa
Directions

1Cook yellow rice per directions on packet in rice cooker.

2While rice is cooking cook chicken with taco seasoning until done.

3Open cans of beans and cook individually until done.

4Dice up chicken.

5Place on plate in order of rice, beans, meat, cheese, lettuce, tomato, sour cream, salsa.

6NOTE: You can use white rice with cilantro or half white half yellow rice if you prefer.
