- 4 firm texture fish steaks (5 to 7 oz.) or skinless fillets (about 3/4-inch thick)
- salt to taste
- pepper to taste
- 2 Tbsp. Parmesan cheese, freshly grated
Directions

1Preheat broiler.

2Rinse steaks or fillets; pat dry with paper towels.

3Season with salt and pepper.

4Spread 1 to 1 1/2 tablespoons mayonnaise over top of each steak or fillet.

5Sprinkle 1 1/2 teaspoons cheese on top of each.

6Place on broiling pan. Broil 4 to 6 inches from heat, 5 to 8 minutes or until top is puffed and brown and fish tests done.

7Serves 4.
