Napa Salad

Ingredients

  • 1 head Napa cabbage, chopped fine
  • 6 green onions, chopped fine
  • 2 packages Ramen noodles
  • 4-5 oz. slivered almonds
  • 1/2 cup margarine ( I use 1/4 cup )
  • 1/2 cup oil
  • 1/2 cup rice wine vinegar
  • 1/2 cup sugar
  • ! 2 Tbs. soy sauce

    1. Melt margarine in large skillet.

    2. Crush Ramen noodles in the bag.

    3. Put noodles in skillet, discarding flavor packet.

    Add almonds and saute until golden.

    4. Cool on paper towels on cookie sheet.

    5. Mix four dressing ingredients. Shake very well.

    5. Chop Napa cabbage. Chop green onions.

    6. Chill in plastic bags until ready to use.

    7. Toss vegetables together with dressing just before eating.

    8. Toss in the noodle/almond mixture, sprinkling some on top. [If noodles are added too early, they get soggy.]
