Ingredients
- 12 to 18 lb. turkey
- salt and pepper
- 1 onion, peeled
- 3 1/2 to 5 c. water (depending on size of turkey)
- 2 stalks celery with leaves
Directions

1Massage bird with salt and pepper inside and out.

2Peel peeled onion and chopped celery inside the cavity of turkey.

3Add water to roasting pan.

4Place turkey back side up in roaster on a rack and put lid on roaster, fitting tightly.

5Place covered roaster in a cold oven and turn to bake at 500°.

6Do not open oven door at any time.

7Let cook for one hour.

8Turn off the oven and forget the turkey for several hours.

9Meat will be brown and moist and plenty of broth.
