- 1 1/2 lb. yellow squash
- 1/2 c. butter
- 1/2 c. chopped onion
- 1/4 c. bell pepper
- 1/2 c. mayonnaise
- 1/2 c. grated Cheddar cheese
- 1 c. chopped water chestnuts
- 1 egg
- 1 Tbsp. sugar
- Ritz cracker crumbs
Directions

1Cook sliced squash until fork-tender; drain. Saut onions and pepper in butter. Add all ingredients except crumbs. Pour into 1 1/2-quart greased casserole. Top with crumbs. Bake at 350° for 30 minutes. Serves 6. Can freeze. Can do ahead.
