  • 1 1/2 lb. yellow squash
  • 1/2 c. butter
  • 1/2 c. chopped onion
  • 1/4 c. bell pepper
  • 1/2 c. mayonnaise
  • 1/2 c. grated Cheddar cheese
  • 1 c. chopped water chestnuts
  • 1 egg
  • 1 Tbsp. sugar
  • Ritz cracker crumbs

Directions

    Cook sliced squash until fork-tender; drain. Saut onions and pepper in butter. Add all ingredients except crumbs. Pour into 1 1/2-quart greased casserole. Top with crumbs. Bake at 350° for 30 minutes. Serves 6. Can freeze. Can do ahead.
