Nine Bean Soup

Ingredients

  • 2 c. bean mix
  • 2 qt. water
  • 1 lb. country ham (bits and pieces)
  • 1 chopped onion
  • 1 tsp. salt
  • 1 (16 oz.) can tomatoes (undrained)
  • 1 (10 oz.) can tomatoes and green chilies

Directions

    Place bean mix in Dutch oven and cover with water to 2 inches over beans.

    Let soak overnight.

    Drain beans.

    Add 2 quarts water, ham, onion and salt.

    Cover and bring to a boil.

    Reduce heat and simmer until beans are tender (about 1 1/2 hours).

    Add both cans of tomatoes and simmer another 1/2 hour.

    Makes 8 cups.

    Can also be cooked in a crock-pot.
