Ingredients

  • 1/2 cups Peanut Butter
  • 1 cup Dry Oatmeal (I Use Quick Oats)
  • 1/2 cups Dried Cranberries
  • 1/2 cups Dried Blue Berries
  • 1/2 cups Honey
  • 23 cups Flaked Coconut
  • 1/2 cups Flax Seed
  • 1/2 cups Chia Seeds
  • 1 teaspoon Vanilla Extract

Directions

    Stir all ingredients together in a medium bowl until thoroughly mixed.

    Let chill in the refrigerator for half an hour.

    Once chilled, roll into balls of whatever size you would like.

    Store in an airtight container and keep refrigerated for up to 1 week.

    Some folks use chocolate chips, but I use dried fruit as my husband is diabetic.

    Makes about 20-25 balls.
