  • 2 tsp. olive oil
  • 1 log prepared polenta
  • 2 large takeout orders chili
  • 1 can chopped mild green chiles
  • 1/2 c. loosely packed fresh cilantro leaves

    In nonstick 12-inch skillet, heat oil over medium-high heat.

    Add polenta rounds and cook about 2 minutes per side or until golden.

    Meanwhile, in microwave-safe medium bowl, stir together takeout chili and chiles with their liquid.

    Cover and microwave on High 1 to 2 minutes or until heated through.

    Stir in 3 tablespoons cilantro.

    Spoon chili into 4 shallow bowls.

    Top with polenta rounds and sprinkle with remaining cilantro.
