- 2 tsp. olive oil
- 1 log prepared polenta
- 2 large takeout orders chili
- 1 can chopped mild green chiles
- 1/2 c. loosely packed fresh cilantro leaves
Directions

1In nonstick 12-inch skillet, heat oil over medium-high heat.

2Add polenta rounds and cook about 2 minutes per side or until golden.

3Meanwhile, in microwave-safe medium bowl, stir together takeout chili and chiles with their liquid.

4Cover and microwave on High 1 to 2 minutes or until heated through.

5Stir in 3 tablespoons cilantro.

6Spoon chili into 4 shallow bowls.

7Top with polenta rounds and sprinkle with remaining cilantro.
