- 1 lb. dried beans
- 1 qt. defatted beef stock or water
- 2 cloves garlic, minced
- 1 onion, diced
- 2 to 3 drops smoke flavoring
- salt and pepper to taste
Directions

1Pick over and rinse beans.

2Put in 4-quart pot with water to cover.

3Bring to a boil. Cover and remove from heat.

4Let stand for 10 minutes. Drain.

5Add stock or water.

6Bring to a boil. Turn heat to medium-low and simmer 1 1/2 to 2 1/2 hours until tender.

7Add remaining ingredients halfway through cooking time.
