- 1 1/2 lb. bacon
- 2 medium chopped bell peppers
- 2 small chopped onions
- 2 cans mushrooms
- 1 doz. scrambled eggs
- small bag carrots (grated)
- 2 c. rice
- 4 c. water
Directions

1Cook rice in water until done.

2Cube and fry the bacon crisp. Cook onions, bell peppers and carrots. Drain and add mushrooms. Scramble the eggs and add to the vegetables. Add the cooked rice to this and mix well.
