- 6 medium potatoes, boiled in skins
- 2 c. sour cream
- 1 to 2 tsp. salt
- dash of pepper
- 1/2 medium onion, minced
- 6 Tbsp. butter
- 2 c. Cheddar cheese, shredded
Directions

1Refrigerate cooked potatoes for 24 hours.

2Melt 4 tablespoons butter with cheese in double boiler.

3Add sour cream, salt, pepper and onion.

4Stir to blend.

5Remove from heat.

6Peel cold potatoes; grate and stir into cheese mixture.

7Put in oblong pan and bake at 350° for 45 minutes.

8Good with baked ham!
