Nut Cream Cake

Ingredients

  • 1 c. sugar
  • 1 c. butter or margarine
  • 3 eggs, separated
  • 2 c. cake flour
  • 2 Tbsp. grated orange rind
  • 2 Tbsp. grated lemon rind
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. ground walnuts
  • 3/4 c. sour cream

Directions

    Cream butter with sugar, then add the egg yolks and grated rinds; beat until light and fluffy.

    Sift flour, baking powder and soda together.

    Stir 2 tablespoons of this mixture into the nuts. Fold nuts, dry ingredients and sour cream into the egg yolk mixture.

    Lastly, beat the egg whites until stiff and fold in lightly.

    Butter and flour a spring-form cake pan.

    Turn in the mixture and bake at 350° for 1 hour, or until the cake tests done. Remove from the oven.

    Let stand 5 minutes.

    Remove the spring sides of the pan.

    Dust with powdered sugar.
