Nutritious Spinach Cheesecake

- 400 grams Cream cheese (softened)
- 3 Eggs
- 120 grams Sugar
- 2 tsp Lemon juice
- 1 bunch Spinach
Directions

1Grease the cake pan with unsalted butter and line the bottom and sides with parchment paper.

2Preheat the oven to 200C.

3Put the spinach in a plastic bag and microwave (600 W for about 2 minutes).

4Once heated, drain.

5Squeeze out the moisture and chop the spinach.

6Run through a food processor or blender until smooth and forms a paste.

7During Step 3, if there does not seem to be enough moisture, add an egg.

8Add the remaining ingredients and blend until creamy.

9Pour into the cake pan.

10Reduce the temperature of the oven from 200C to 190C and bake for 30 minutes.

11Rotate the cooking pan and bake at 180C for another 30 minutes.

12It is done when the top springs back after you lightly press down on the top with the palm of your hand.

13Let cool on a rack in the pan.

14Run a knife around the edge to separate the cake from the parchment paper.

15Cover with a paper towel and let sit until completely cool.

16Once completely cooled, let sit in the refrigerator overnight.
