Ingredients
- 1 c. raw wild rice
- 5 1/2 c. chicken stock
- 1 c. pecan halves
- 1 c. yellow raisins
- grated rind 1 orange
- 1/4 c. chopped fresh mint
- 4 green onions, thinly sliced
- 1/4 c. olive oil
- 1/3 c. fresh orange juice
- 1 1/2 tsp. salt
- black pepper to taste
Directions

1Put rice in strainer and run under cold water to rinse thoroughly.

2Place rice in heavy saucepan.

3Add stock.

4Bring to a rapid boil.

5Adjust heat to gentle simmer and cook uncovered 45 minutes.

6After 30 minutes check for doneness.

7It should not be too soft.

8Turn rice into colander and drain.

9Transfer drained rice to a bowl.

10Add remaining ingredients and toss gently.

11Let mixture stand for 2 hours to allow flavor to develop.

12Serve at room temperature.

13Will keep a week refrigerated.

14Excellent with beef.
