Oatmeal Cinnamon Rolls

  • 1 c. quick oats
  • 1/2 c. whole wheat flour
  • 1/2 c. brown sugar
  • 1 Tbsp. salt
  • 2 Tbsp. margarine
  • 2 c. boiling water
  • 1 pkg. dry yeast
  • 1/2 c. warm water
  • 5 c. white flour

Directions

    Combine oats, wheat flour, brown sugar, salt and margarine in a large bowl.

    Pour over boiling water and stir in to combine. Dissolve the yeast in warm water.

    When the batter is cooled to lukewarm, add the yeast and stir in white flour.

    When dough is stiff enough to handle turn onto floured board and knead 5-10 min. Place in greased bowl, cover and let rise until doubled.

    Punch down and let rise again.

    Shape into roll - flatten slightly and put 1 tsp. cinnamon/sugar in middle.

    Shape into roll and place in a greased pan.

    Bake at 350 degrees for 30-40 minutes.

    Cool on rack, brush rolls with margarine for a soft crust.
