Oatmeal Molasses Bread

Ingredients
- 1 c. rolled oats
- 1 1/2 c. water
- 1/3 c. vegetable oil or olive oil
- 1/2 c. molasses or 1/4 c. honey and 1/4 c. molasses
- 1 Tbsp. salt
- 2 Tbsp. dry yeast (2 pkg.), dissolved in 1/2 c. warm water
- 2 eggs
- 5 1/2 c. flour
Directions

1Bring water to a boil and add to rolled oats.

2Mix in oil, molasses, salt and cool to lukewarm.

3Add yeast solution and eggs, stir altogether.

4Add flour.

5Mix and knead until waxy.

6Cover. When double in bulk, punch down and rise again (not necessary, but makes better bread).

7Shape into 2 loaves.

8Let rise again in bread pans until slight indentation shows.

9Bake about 40 to 45 minutes at 350°.

10After 20 minutes, cover with foil to keep from browning too much.
