  • 5/8 cup oats
  • 1 cup milk
  • 7 3/4 tablespoons brown sugar
  • 1 egg
  • 4 tablespoons vegetable oil or melted butter
  • 1 1/2 teaspoons baking powder
  • 1 cup cranberries

    Preheat oven to 425 degrees Fahrenheit.

    In a bowl, mix the sugar, flour, yeast, oat flakes, and cranberries. Make a well in the center of the mixture and add the egg. Mix the milk and the oil in gradually. Once the mixture is smooth, stop stirring. Pour the batter into a muffin pan or small paper baking cups (reinforced to prevent collapse under the weight of the dough). Bake for about 20 minutes.
