- 1 c. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. quick cooking oats
- 1/2 c. brown sugar, firmly packed
- 1 egg, beaten
- 1 c. buttermilk
- 1/4 c. cooking oil
Directions

1Sift together the flour, baking powder baking soda, salt and cinnamon.

2Combine oats, brown sugar and buttermilk in a bowl. Let stand for 10 minutes.

3Add egg and oil; mix well.

4Add dry ingredients and stir just enough to moisten.

5Spoon batter into greased or paper-lined muffin cups, filling 2/3 full.

6Bake at 375° for 15 minutes or until done.

7Makes 12 large muffins.
