  • 2 whole Eggs
  • 1/2 cups Honey (or Slightly Less For A Less Sweet Pie)
  • 3/4 cups Quick Cooking Oats
  • 3/4 cups Flaked Coconut (or Slightly Less For A Less Sweet Pie)
  • 3/4 cups Packed Brown Sugar
  • 1/2 cups Unsalted Butter Or Margarine, Softened
  • 1/2 cups Currants (optional)
  • 1/2 cups Chopped Walnuts
  • 1 whole Unbaked 9 Inch Pie Crust
  • Whipped Cream Or Ice Cream (optional)

Directions

    Preheat oven to 350F.

    In a mixing bowl, beat eggs. Add honey, oats, coconut, brown sugar, butter, currants and walnuts; mix well.

    Pour into the pie shell. Bake for 40 to 45 minutes or until browned and a knife inserted near the center comes out clean. Cool.

    Serve with a dollop of whipped cream or ice cream, if desired.
