Ingredients

  • 2 1/4 c. quick oatmeal
  • 3/4 c. brown sugar
  • 3/4 c. raisins or dried cranberries
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 1/2 c. skim milk
  • 4 egg whites
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. vanilla

Directions

    Combine oats, brown sugar, fruit, cinnamon and salt. Mix well. Combine milk, egg whites, oil and vanilla. Add to dry ingredients. Mix well. Bake in a preheated oven at 350° in a 9 inch pan for 50 to 100 minutes or until center is firm to the touch. Cool slightly. Serve with milk, yogurt and fruit, if desired. Store
