  • 4 ounces, weight Fresh Sea Bass, Cut Into Bite Size Pieces
  • 2 whole Fresh Limes, All The Juice And Half The Zest
  • 2 Tablespoons Olive Oil
  • 1- 1/4 Tablespoon Red Wine Vinegar
  • 1/2 cups Diced English Cucumber
  • 1/2 cups Diced Red Onion
  • Sea Salt And Black Pepper To Taste

    Note: Preparation time does not include 1 hour refrigeration time.

    In a bowl (I use a clear glass bowl), add sea bass pieces, lime juice and zest.

    Gently stir.

    Add olive oil and red wine vinegar, and again gently stir.

    Cover with plastic wrap and refrigerate 1 hour.

    Remove from refrigerator.

    Add diced cucumber, diced red onion, and salt and pepper to taste.

    Gently stir.

    Serve in your favorite fluted glasses or stemware.
