- 1 lb. navy beans (dry)
- 2 tsp. salt
- 11 c. water
- 1 1/2 lb. ham hocks (pieces)
- 3/4 c. grated carrots
- 3/4 c. chopped celery
- 2/3 c. chopped onion
Directions

1Rinse navy beans and pick out the bad ones.

2Place beans into the 11 cups of boiling water.

3Boil for 2 minutes; cover and let stand overnight.

4The next day, add salt and other ingredients. Gently boil beans in the same water in a covered pot for about 2 hours until tender.

5Add more water as needed.

6Remove fat, bone and skin from ham but leave the meat in.

7Season to taste and simmer 1/2 hour before serving.
