Old-Fashioned Skillet Corn Bread

- 3 Tbsp. butter or margarine
- 1 c. cornmeal
- 1/2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 2 eggs
- 1 c. milk
Directions

1Melt butter or margarine in heavy iron skillet in oven while it's being preheated to 350°.

2Combine cornmeal, flour, baking powder, salt and sugar in mixing bowl.

3In separate bowl, beat eggs.

4Add milk and 2 tablespoons melted margarine from skillet. Quickly stir milk into cornmeal mixture.

5Pour batter into remaining margarine in hot skillet.

6Bake for 20 to 25 minutes. Goes great with chili!

7Can also be done in round cake pan.
