On-Call Salad

Ingredients
- 1 (15 oz.) can garbanzo beans, drained
- 1/4 c. mayonnaise or salad dressing
- 1/4 c. bottled Green Goddess salad dressing or other creamy salad dressing
- 12 (3-inch) individual whole wheat lahvosh rounds
- 1 1/2 c. shredded lettuce
- 1 c. shredded Cheddar cheese (4 oz.)
- 1/3 c. sliced almonds
Directions

1In a blender container or food processor bowl, combine garbanzo beans, mayonnaise or salad dressing and Green Goddess salad dressing.

2Cover and blend until mixture is smooth.

3Spread about 2 tablespoons of the mixture over each lahvosh cracker. Sprinkle shredded lettuce, shredded Cheddar cheese and sliced almonds over each cracker.

4Layer lahvosh, 3 in a stack, to form 4 stacks.

5Cover the salads with clear plastic wrap; refrigerate up to 4 hours.

6Makes 4 servings.
