Ingredients
- 1 tablespoon coconut oill
- 3 garlic cloves
- 2 inches ginger
- 1/2 cup dessicated coconut
- 1 teaspoon maple syrup
- 2 tablespoons red curry paste
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1/2 cup chopped peppers
- 1 cup spinach
- 1 lime juice
- 8 ounces Ramen noodles
- 1 handful cilantro for garnish
Directions

1Heat the oil in a pan and fry the ginger and garlic, stirring for a minute or two.

2Add dessicated coconut, maple syrup, soy sauce and red curry paste and mix. Stir in the coconut milk and bring it to a slow boil.

3Add the vegetables and stir until they begin to soften, about 5 mins.

4Add the noodles last, stir until covered in sauce, cook for 5 mins.

5Serve, garnished with lime juice and cilantro.
