- 2 12 lbs standing rib roast (1 rib)
- 1 tablespoon olive oil
- 1 clove garlic, mashed
- 2 large baking potatoes
Directions

1Wrap the meat well and freeze until solid.

2Mix the oil and garlic and rub the mixture evenly over the frozen meat.

3Stand, rib bone down, on a rimmed baking sheet between the 2 potatoes, placed like book ends.

4Roast frozen, do not thaw.

5Roast in a preheated 400 oven 1 hour and 15 minutes for rare, 1 hour and 25 minutes for medium rare, 1 hour and 35-40 minutes for well done.
