  • 2 1/2 c. self-rising corn meal
  • 1/3 c. flour
  • 1/3 c. diced onions
  • 1 egg
  • 1 Tbsp. vegetable oil
  • 1 1/2 c. buttermilk

    Mix together corn meal and flour.

    Add buttermilk.

    Beat egg, then add to mixture.

    Add oil and mix well.

    Add diced onions. Brush butter on bottom and sides of muffin pan (approximately 1/4 cup melted butter).

    Spoon equal amounts of mixture in each pan. Preheat oven.

    Bake at 375° for 45 minutes or until golden brown.
