  • 1 onion, diced
  • 4 tomatoes, de-seeded and diced
  • 1 English cucumber, peeled, de-seeded and diced
  • 1/2 cup cilantro leaf, finely chopped
  • 1 lime, juice of
  • salt and pepper

    Mix together vegetables, lime juice and cilantro leaves.

    Refrigerate for at least an hour to allow flavours to meld.
