  • 4 cups water
  • 2 tablespoons lightly packed oolong tea leaves
  • 1 cup of fresh mint
  • 2 cups peach nectar
  • 3 tablespoons sugar
  • 12 teaspoon vanilla
  • fresh peach, wedges
  • fresh mint sprig

Directions

    In medium saucepan over medium heat, bring water to just below a simmer (190 degrees F.).

    Remove from heat.

    Add tea and 1 cup mint; let steep 3 minutes.

    Strain tea.

    Add peach nectar, sugar and vanilla; mix well.

    Refrigerate until chilled.

    Serve garnished with peach wedges and mint sprigs.
