Oops Potato Salad

Ingredients
- 5 lbs russet potatoes
- 1 cup mayonnaise
- 14 cup mustard (too much for my taste)
- 2 tablespoons spicy brown mustard
- 2 large pickles
- 12 cup green olive, with pimentos
- 12 yellow onion
- 1 teaspoon pepper
- 1 tablespoon salt (too much for my taste)
Directions

1Wash, dice, and boil potatoes until fork tender.

2Don't bother peeling them, no one ever notices :-).

3Meanwhile, mince onion in food processor.

4Add pickles, and pulse for a few seconds, then add olives and pulse a few seconds more.

5You want the consistency to resemble pickle relish.

6Stir the mayo, mustards, salt, and pepper into the pickle mixture.

7Once the spuds are done, drain, and rinse in cool water.

8I rinse them a few times, then let them sit a few minutes until they have cooled down.

9Stir potatoes into sauce mixture, and mash slightly with fork or pasta spoon.

10Chill, and enjoy.

11The flavor mellows with time, and its better after several hours.
