  • 12 cup butter or 12 cup margarine
  • 14 cup baking cocoa
  • 2 eggs
  • 1 cup sugar
  • 34 cup all-purpose flour
  • 12 cup chopped pecans
  • 2 tablespoons orange juice concentrate
  • 1 tablespoon grated orange peel
  • 1 12 cups confectioners' sugar
  • 3 tablespoons butter or 3 tablespoons margarine, softened
  • 2 tablespoons orange juice concentrate
  • 1 tablespoon grated orange peel (optional)

Directions

    In a small saucepan, melt butter.

    Stir in cocoa until smooth.

    Remove from the heat.

    In a bowl, beat eggs until frothy.

    Without stirring, add the sugar, flour, pecans, orange juice concentrate, peel and salt.

    Pour cocoa mixture over the top; mix well.

    Transfer to a greased 8 inch square baking pan.

    Bake at 350 degrees for 28-32 minutes or until edges begin to pull away from sides of pan.

    Cool completely on a wire rack.

    For frosting, combine confectioners' sugar, butter and orange juice concentrate; mix well.
