  • 6 eggs, separated
  • 2 cup sugar, divided- 1 Cup each
  • 1/2 cup Orange juice
  • 1 grated rind of 1 orange
  • 1/2 cup boiling water
  • 2 cup cake flour
  • 2 tsp baking powder
  • 2 tbsp butter
  • 1 cup confectioner's sugar
  • 1/3 cup orange juice
  • 1 grated rind of 1/2 orange

    Preheat oven to 325F

    For the cake

    Beat yolks well.

    Add 1 Cup sugar to yolks and beat well, until light yellow.

    Sift flour and baking powder together.

    Set aside.

    Add orange juice and rind, then water.

    Add the flour mixture.

    Set aside.

    In a separate bowl, beat egg whites, gradually add the remaining sugar to the whites and continue beating until stiff.

    Fold yolk mixture into egg white mixture.

    Bake in ungreased 10-inch tube pan for 20 minutes,

    Increase heat to 350F and bake for another hour or until fork or cake tater comes out clean when inserted in center of cake.

    Cream all icing ingredients together and spread on cake.
