Orange Fruit Cake

  • 1 c. butter or margarine
  • 2 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 4 c. all-purpose flour, sifted
  • 1 tsp. salt
  • 1 1/2 c. buttermilk
  • 1 tsp. baking soda
  • 2 Tbsp. grated orange rind
  • 2 c. raisins, chopped
  • 1 c. walnuts, chopped
  • 1 c. coconut, flaked

Directions

    In a bowl, cream butter and sugar until light and fluffy.

    Add eggs, one at a time, beating well after each.

    Add vanilla.

    Add sifted flour and salt alternately with combined buttermilk and soda.

    Blend in orange rind, raisins, walnuts and coconut.

    Turn into a well-greased and floured tube pan (10-inch).

    Bake in slow oven (300°) until a cake tester comes away dry (about 1 1/2 hours). Remove from oven, leave cake in pan.
