- 1 1/4 cup all-purpose flour
- 3 tsp baking powder
- 1 None egg
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 None orange, peeled and segments removed from between membranes with a knife then cut, reserve juices
- 3/4 cup powdered sugar
- 1 None egg white
- 1 tbsp lemon juice
- 1-2 tbsp pistachios, chopped
Directions

1Preheat the oven to 325°F. Line a 12 cup muffin pan with paper liners. Mix the flour and baking powder. In a separate bowl, mix the whole egg, butter, sugar, a pinch of salt and the vanilla extract. Stir in the buttermilk and orange juice alternating with the flour mixture then fold in the pieces of orange. Distribute the batter between the liners. Bake for 20-25 mins, then remove from oven and set aside to cool.

2Meanwhile, mix the powdered sugar with the egg white and lemon juice. Spread the icing onto the cooled muffins and sprinkle with chopped pistachios. Let the icing dry before serving.
