- 2 1/2 c. buttermilk baking mix
- 2/3 c. sugar
- 3 eggs
- 2 Tbsp. grated orange rind
- 3/4 c. orange juice
- 3/4 c. chopped pecans or walnuts
Directions

1Combine baking mix, sugar, eggs, orange rind and juice in a large mixing bowl.

2Beat at medium speed with electric mixer for 3 minutes.

3Fold in the nuts.

4Pour batter into a well-greased 9 x 5 x 3 inch loaf pan.

5Bake at 350 degrees for 55 minutes or until a toothpick inserted in center comes out clean.

6Cool in pan 10 minutes; remove from pan and cool completely on a wire rack. Drizzle with Orange Glaze and garnish with orange zest, if desired.

7Slice and serve.
