Orange Nut Loaf

Ingredients

  • 2 1/2 c. buttermilk baking mix
  • 2/3 c. sugar
  • 3 eggs
  • 2 Tbsp. grated orange rind
  • 3/4 c. orange juice
  • 3/4 c. chopped pecans or walnuts

Directions

    Combine baking mix, sugar, eggs, orange rind and juice in a large mixing bowl.

    Beat at medium speed with electric mixer for 3 minutes.

    Fold in the nuts.

    Pour batter into a well-greased 9 x 5 x 3 inch loaf pan.

    Bake at 350 degrees for 55 minutes or until a toothpick inserted in center comes out clean.

    Cool in pan 10 minutes; remove from pan and cool completely on a wire rack. Drizzle with Orange Glaze and garnish with orange zest, if desired.

    Slice and serve.
