  • prepared pie shell
  • 1/4 c. sugar
  • 1/4 tsp. salt
  • 1 grated California orange peel
  • 3 eggs, slightly beaten
  • 1 c. light corn syrup
  • 1/2 c. coarsely broken pecans
  • 3 Tbsp. juice of orange

Directions

    Spread with tips of fingers just enough of egg mixture on bottom and sides of pie shell to coat it.

    Place in oven for 5 minutes at 425°; this prevents a soggy crust.

    Add to rest of egg mixture the rest of the ingredients.

    Mix and pour into pie shell. Bake at 350° for 40 minutes.

    Test with knife for doneness.
