- 1 c. sugar
- 1 tsp. cream of tartar
- 1/3 c. orange juice
- 2 1/4 c. pecan halves
- 1/2 tsp. grated orange rind
Directions

1Combine sugar, cream of tartar and orange juice in a saucepan. Cook over low heat, stirring gently, until sugar dissolves. Cover orange mixture and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook over medium heat to soft ball stage (240°).

2Remove from heat and beat with a wooden spoon just until mixture begins to thicken.

3Stir in pecans and orange rind.

4Working rapidly, drop by heaping teaspoonfuls onto wax paper; let cool.

5Yields about 2 dozen.
