Orange Pecans

  • 1 c. sugar
  • 1 tsp. cream of tartar
  • 1/3 c. orange juice
  • 2 1/4 c. pecan halves
  • 1/2 tsp. grated orange rind

Directions

    Combine sugar, cream of tartar and orange juice in a saucepan. Cook over low heat, stirring gently, until sugar dissolves. Cover orange mixture and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook over medium heat to soft ball stage (240°).

    Remove from heat and beat with a wooden spoon just until mixture begins to thicken.

    Stir in pecans and orange rind.

    Working rapidly, drop by heaping teaspoonfuls onto wax paper; let cool.

    Yields about 2 dozen.
