Orange Polenta Cake

  • 1/2 cup butter chopped, at room temperature
  • 1 cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup ground hazelnuts
  • 1 cup polenta
  • 1 teaspoon baking powder
  • 3 oranges zested and juiced, plus extra zest to serve
  • powdered sugar for dusting
  • whipped cream to serve

Directions

    Preheat oven to 300°F. Lightly grease and line an 8 inch springform pan with parchment paper.

    Cream butter and sugar together until creamy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine ground hazelnuts, polenta, baking powder and orange zest. Fold into batter along with 1 cup orange juice. Transfer to prepared pan and bake for 55-60 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.

    Dust with powdered sugar. Serve in wedges topped with extra grated zest and whipped cream.
