  • 2 qt. vegetable stock
  • 2 c. medium orzo (rice shaped pasta)
  • 3/4 c. chopped fresh herbs (parsley, basil or tarragon)
  • 1/4 c. fresh lemon juice
  • ground black pepper to taste
  • salt to taste

Directions

    Bring vegetable stock to a boil in a large saucepan.

    Add orzo and cook for about 8 minutes until just tender.

    Drain and toss with herbs and lemon juice.

    Season with pepper and salt.

    Serve hot, room temperature or chilled.
