- 2 qt. vegetable stock
- 2 c. medium orzo (rice shaped pasta)
- 3/4 c. chopped fresh herbs (parsley, basil or tarragon)
- 1/4 c. fresh lemon juice
- ground black pepper to taste
- salt to taste
Directions

1Bring vegetable stock to a boil in a large saucepan.

2Add orzo and cook for about 8 minutes until just tender.

3Drain and toss with herbs and lemon juice.

4Season with pepper and salt.

5Serve hot, room temperature or chilled.

6Can be made up to 6 hours in advance.
