- 1/2 c. fine cracker crumbs
- 1/4 tsp. rubbed oregano
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1 egg
- 1 Tbsp. water
- 2 (1 lb.) eggplants
- 1/4 c. butter or margarine, melted
Directions

1Mix cracker crumbs with oregano, paprika and salt.

2Set aside. Beat egg with water.

3Peel eggplant.

4Cut back lengthwise int 6 segments.

5Dip eggplants into beaten egg and then into crumb mixture.

6Let stand at least 30 minutes.

7Place in shallow baking pan.

8Drizzle with melted butter.

9Bake in 400° oven for about 20 minutes or until crisp.
