Oven-Crisp Eggplant

  • 1/2 c. fine cracker crumbs
  • 1/4 tsp. rubbed oregano
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1 egg
  • 1 Tbsp. water
  • 2 (1 lb.) eggplants
  • 1/4 c. butter or margarine, melted

    Mix cracker crumbs with oregano, paprika and salt.

    Set aside. Beat egg with water.

    Peel eggplant.

    Cut back lengthwise int 6 segments.

    Dip eggplants into beaten egg and then into crumb mixture.

    Let stand at least 30 minutes.

    Place in shallow baking pan.

    Drizzle with melted butter.

    Bake in 400° oven for about 20 minutes or until crisp.
