- 2 c. cornflakes or 1/2 c. bread crumbs
- 1/4 c. butter or margarine
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
Directions

1Crush cornflakes to make 1 cup crumbs.

2Set aside.

3In small saucepan, melt butter or margarine.

4Remove from heat; stir in salt and pepper.

5Rinse chicken; pat dry.

6Brush with butter mixture.

7Place crushed cornflakes or bread crumbs on a sheet of wax paper; roll chicken in crumbs to coat.

8Arrange chicken, skin side up and so pieces don't touch, in shallow baking pan.

9Bake in 375° oven for 50 to 60 minutes.

10Do not turn.
