  • frying chicken pieces, about 3 lb.
  • 2 eggs
  • 4 Tbsp. milk
  • 2 1/2 c. cornflakes, crushed but not powdered
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 5 tsp. butter
  • 1/4 c. flour

    Wash chicken and pat dry.

    Mix eggs and milk, beat to uniformity.

    In a separate dish, mix cornflakes, salt and pepper. Dip chicken in flour, then into egg mixture.

    Coat evenly.

    Then dip in cornflakes to coat with this mixture.

    Place in well-greased baking pan.

    Drizzle with melted butter.

    Bake, uncovered, for 1 hour at 350° to desired doneness.
