Slow Cooker Beef Bourguignon

  • cooking spray
  • 2 lbs stewing beef
  • 1 large carrot, sliced
  • 1 medium onion, sliced
  • 3 tablespoons flour
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried tarragon
  • 1 bay leaf
  • 12 lb white pearl onion, peeled
  • 1 lb mushroom, sliced
  • 12 cup dry red wine

Directions

    Spay skillet with cooking spray.

    Add beef, carrot and onion; cook until beef is browned.

    Add flour and cook 1-2 minutes.

    Stir in beef stock and heat to boiling.

    Transfer to slow cooker.

    Add remaining ingredients, except mushrooms and wine.

    Cover and cook on low 8-10 hours.

    Add mushrooms and wine during the last hour of cooking.
