  • 2 (2 lb.) frying chickens
  • 1/2 c. buttermilk
  • 1 medium onion, minced
  • 1 c. flour
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. paprika
  • 1/4 tsp. ground thyme
  • 1/4 c. butter or margarine

Directions

    Cut chicken into serving pieces.

    Combine buttermilk and onion.

    Sift flour with salt, pepper, paprika and thyme.

    Melt the butter in a baking pan.

    Brush each piece of chicken with the buttermilk mixture, then sprinkle with the seasoned mix.

    Place pieces skin down in the baking pan.

    Bake in oven at 375° for 30 minutes.

    Turn each piece and bake 30 minutes longer or until very tender.
