- 1 lb. fresh okra
- 1/4 c. egg substitute
- 1/4 c. nonfat buttermilk
- 2/3 c. cornmeal
- 1/3 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. vegetable oil
- vegetable cooking spray
Directions

1Wash okra and drain.

2Remove tips and stem ends; cut okra crosswise into 1/2-inch slices.

3Combine egg substitute and buttermilk; stir in okra and let stand 10 minutes.

4Combine cornmeal and next 3 ingredients in a zip-top plastic bag.

5Drain okra, small portions at a time, using a slotted spoon.

6Place okra in bag with cornmeal mixture, shaking gently to coat.

7Brush oil on a 15 x 10 x 1-inch jellyroll pan; add okra in a single layer.
