- 1 1/2 tsp. vegetable oil
- 2 large baking potatoes
- 2 egg whites
- salt and pepper to taste
Directions

1Preheat oven to 425°.

2Grease a nonstick baking sheet with the vegetable oil.

3Scrub the potatoes thoroughly under running water; pat dry.

4Slice them lengthwise into 1/4-inch thick slices, then cut into fries of the desired size.

5Pat the fries dry.

6In a medium bowl, beat the egg whites with a whisk until foamy.

7Add the potatoes and toss until coated.

8Arrange the fries in a single layer on the baking sheet.

9Bake until crisp and lightly brown and tender, 30 to 35 minutes.
