- 3 lb. russet potatoes
- 4 tsp. vegetable oil
- nonstick cooking spray
- Coarse salt and ground pepper
Directions

1In a large bowl, cover potatoes with water by 2 inches.

2Refrigerate at least 3 hours (or up to overnight).

3Preheat oven to 400 degrees F, with racks in upper and lower thirds.

4Lightly coat two rimmed baking sheets with cooking spray.

5Drain potatoes and pat dry; wipe out bowl.

6Toss potatoes in bowl with oil and season with salt and pepper.

7Divide potatoes between sheets and arrange in a single layer.

8Bake until golden and crisp, 45 minutes.

9Toss potatoes and rotate sheets.

10Bake 15 minutes more.
