Oven Oxtail Stew

- 2 lb. fresh oxtails
- 2 medium carrots
- 1 medium onion
- 1 clove garlic
- 2 medium potatoes
- 1/2 c. bell pepper
- 1 c. green beans
- 1/2 c. celery
- 1 large fresh tomato
- 1 can clear beef broth
Directions

1Place oxtails in roasting pan at about 375° for about 1 hour. Drain off excessive fat.

2Have vegetables cut to your favorite size.

3Place in pan with oxtails.

4Pour in beef broth; season to taste.

5Add 1 tablespoon cooking wine.

6Cover pan tightly with foil.

7Return to oven and cook until oxtails are well done.

8May or may not need to add small amount of water.

9Serve as is or with rice.
