Oven Oxtail Stew

Ingredients

  • 2 lb. fresh oxtails
  • 2 medium carrots
  • 1 medium onion
  • 1 clove garlic
  • 2 medium potatoes
  • 1/2 c. bell pepper
  • 1 c. green beans
  • 1/2 c. celery
  • 1 large fresh tomato
  • 1 can clear beef broth

Directions

    Place oxtails in roasting pan at about 375° for about 1 hour. Drain off excessive fat.

    Have vegetables cut to your favorite size.

    Place in pan with oxtails.
  4. 4
    Pour in beef broth; season to taste.

    Add 1 tablespoon cooking wine.

    Cover pan tightly with foil.

    Return to oven and cook until oxtails are well done.

    May or may not need to add small amount of water.

    Serve as is or with rice.
