- 1/2 lb. shrimp, cleaned
- 2 garlic cloves, crushed
- 2 Tbsp. butter
- 1 1/4 c. chicken broth
- 1 Tbsp. cornstarch
- 1 (14 1/2 oz.) can stewed tomatoes
- 1/2 c. sliced pepperoni
- 1 pkg. peas and pearl onions, thawed
- 1/4 tsp. ground red pepper
- 1 1/2 c. Minute rice
- 1/8 tsp. saffron (optional)
Directions

1Cook and stir shrimp and garlic in butter in skillet until shrimp turn pink.

2Mix broth and cornstarch together and stir into shrimp.

3Add tomatoes, pepperoni and vegetables.

4Cook and stir until mix thickens and comes to a full boil.

5Stir in rice and saffron.

6Cover and remove from heat; let stand 5 minutes.

7Fluff. Makes 4 servings.
